These occupations are best fit descriptions based on the occupations and information provided in the four movies. The descriptions are very broad, designed to cover a multitude of actual jobs with similar skills. As such a Theoretical Mathematician and a Vulcanologist do not have much in common, but they are both Scientists with training and a specific field of expertise. Some jobs may fall between categories, such as a forensic scientist, at which point the player may decide to take both occupations and skills, or come at the job from a specific angle. For example, a medically trained psychoanalyst is a psychiatrist, but a scientifically trained psychoanalyst is a psychologist.
I am aware that there are a number of occupations that do not fit into any of these categories, such as professional entertainer. All this means is that the skills involved in the job (eg guitar playing) are not likely to be dramatically important in the game. It also assumes that the individual has had a lot of opportunity to follow other hobbies. Even if a player deeply desires a new skill category the DM shouldn’t allow it since the game is manufactured around these abilities.
